SOUTHERN FRANCE, A GASTRONOMIC PARADISE

​It is an undeniable fact that the south of France is a paradise for food lovers. All gourmets will find many interesting cities connected by Renfe-SNCF en Coopération (Perpignan, Narbonne, Montpellier and Avignon are few examples).

The gastronomic offer is based on seasonal products, old traditions, the Mediterranean lifestyle and exceptional raw materials. The south of France has lately been the scenery of major culinary festivals such as the Palais Gourmand. ​​Below are some suggestions you could try on your next trip: 

CASSOULET

This classic French dish gets its name from the pot it's traditionally baked in, the "casserole".  
This slow-cooker casserole contains meat (typically pork sausages, goose, duck and sometimes mutton), pork skin (couennes) and white beans. 

RATATOUILLE

This mixed vegetable dish has its origin in Nice and its name comes from the French verb "touiller" meaning to toss / coat food. The main ingredients are: eggplant, zucchini, onions, tomatoes and peppers. This dish is ideal as a garnish for meat, fish, and even rice or pasta.

CALISSONS D’AIX

Don't forget to make room for dessert! The Calissons d’Aix has its origin in Aix en Provence. They are made from a paste of ground almonds and candied fruit all covered with a bright royal icing.
