Between late August and early September, the Languedoc-Roussillon region becomes a great wine vintage. With an area of over 200,000 hectares, is the largest wine-growing area in the world. The landscape that we see from Carcassonne ​to the Rhone is teeming with thousands of rows of grape vineyards for harvest, an incomparable "sea of grapes".

About 600 BC. Greeks extended their knowledge of the land to flourish the viticulture in southern Gaul. Thanks to it's excellent continental and Mediterranean climate, the richness and variety of soil, known as "terroir", the Languedoc-Roussillon became a large vineyard whose quality has continued increasing and improving year after year. Wine cultivation spreaded along the ancient Via Domitia, the Roman way that ran from the current Italy to Hispania.

In the late 80s, the farmers of Languedoc-Roussillon adopted a new style in the culture and use of the excellent quality of the region's "Terroirs". This quality is evident in a wide variety of red, white and pink wines, plus some excellent natural sweet wines and small sparkling wine, with nearly 30 different varieties. Another feature of the wine region is the reinvention of winegrowers and winemakers in developing new methods of cultivation based on the respect for the tradition and development of biological and biodynamic agriculture, reaching today to a 10% of the total annual wine production, using these techniques.

​Some of the more than 30 varieties that are the DO of the region are: Carignan noir, Cinsault, Mourvèdre, Cournoise (or Aubun), Grenaches noir and rouge, Oeillade, Syrah y Terret noir, Banyuls, Rivesaltes, Collioure o Maury, among others…
