1. The Cassoulet

A complete dish to recover from the cold

One of the most typical winter dishes in France, the cassoulet comes from the L​anguedoc region. The cassoulet is cooked with haricot beans, meat and sausages. Its name comes from the terra cotta plate it is served in. It’s really substantial, so it is the best way to recover during the coolest days of the year. 

2. The Catalan dish

Really easy to prepare, the Catalan dish, or Escudella catalana is typical in Catalonia. It is a broth in which there are vegetables, several kinds of meat, potatoes and chickpeas. Generally, a big meat bowl is added to the soup – the pilota – and is shared between all the guests when the soup is served. For Christmas​, gallets, -a kind of pasta - are added too. 

3. Boeuf Bourguignon

If you like the stews, you should taste the boeuf bourguignon. The ingredients: heifer, bacon, garlic, onions, carrots, mushrooms, are cooked slowly in a wine sauce. 4. The lentils with chorizo

A hot dish to face the cold

Many winter Spanish dishes are perfect to bear the winter. Lentils can be prepared with all kind of ingredients, that’s why many Spanish families have their own recipe. Most of the bars and restaurants propose specialities prepared with lentils. Among the most popular are the lentils with chorizo; made with lentils from La Armuña or from Tierra de Campos. 5. The Spanish Pot-au-feu or cocido

​​Present on all the Spanish tables during winter, the cocido is a kind of beef stew, which recipe changes depending on the region of Spain. Most of the time, it’s possible to find chicken, beef, pork, blood sausages, chorizo, potatoes and carrots and it is served after a vermicelli soup. Perfect to get warm. 

6. The onion soup

Ideal for cold French nights

The French onion soup is famous all over the world. It’s recommended to take it during the winter. Even the most exigent palates will be seduced by this dish. One of the most interesting recipe is the one which includes melted cheese and caramelised onions.
